You'll savor the sweet flavor and delicate aroma. The rich, creamy flavor
compliments creams, custards, and ice cream, as well as cakes, tarts, and
syrups. Though you may not normally think of vanilla as a spice for savory
foods, it goes well with seafood, particularly lobster, scallops, mussels, and
chicken. Use 1/2 bean for one teaspoon of extract or 1 full bean when the recipe
calls for one tablespoon.

|  |  | Recipe: Homemade Vanilla Extract Ingredients:
750 ml bottle vodka
8 vanilla beans
Directions:
1. Split
vanilla beans lengthwise in half; drop into bottle of vodka.
2. Screw cap onto bottle of vodka, shake, and store in a cool, dark place, such
as a cabinet.
3. Shake bottle a few times a week. After 1 month, vanilla extract is ready to
be used.
4. If desired, add more vodka to bottle as you use vanilla extract to keep the
bottle replenished.
Note: If you wish to drink the vanilla, you may use any number of
alcohols; my favorites include rum, spiced rum, and brandy.
